How many cues will the Lanbox LCX hold? I'll be using 120 dimmer channels, 8 scrollers and 4 Martin 518's. This will be used to run 2 shows, one with 2 45 minute acts and the second with 1 80 minute act. I assume that I can load new cuelists quickly between acts.

A LCX can hold about 1400 cues (full scenes) of 250 channels each. Should be more then enough, but with backup and restore you can load another set of cuelists.

As an option can I control the Lanbox from the Mac so that I can get unlimited cues assuming that I can trigger it from another Mac running Logic. I have a DP 867 G4 and a 7600 upgraded to a G4/450 at my disposal. Logic runs on a DP1.42 G4.

Yes, with a LCX you can use MIDI, Ethernet, USB, and DMX-in, all at the same time. MIDI triggers can be done with bank select + program changes (to Go to the beginning of a cuelist or Go next/prev), but you can also use controllers to Go to any step/cue. See the "LC+ reference v2.0a1.pdf" document inside manuals in the LCedit+ folder.
