If we write firmware for the LCX which -only- had to send out UDP packets, there was also no visible delay! But... The LanBox is a desk with uses a 50mS time slice in which all processing is done. If you connect the DMX-input of a LCX, the data will be collected as it comes in, but it will be processed in the same time slice as all other DMX data.
