question here - what is the average latency between universes?

20 to 60 ms or so, depends heavily on the timing difference between the master and slave LanBoxes.

Here's a diagram: http://www.nubz.org/latency.gif

Explanation of the diagram: The lanbox does all its work in a "tick" that is run every 50 ms, with actual DMX output deferred until the start of the next tick to avoid DMX frame jitter. UDP input is done at the start of the tick (after dmx output) and UDP output at the end of tick. The best case is when the tick of the slave lanbox starts soon after the master tick ends. The worst case is when the slave's tick started a little earlier, and just missed the udp packet(s).

The theoretical worst case delay is around 100 ms, when the master is almost in overload, and the timing between the lanboxes is at its pessimum.
