I have been thinking about what to do with my old LC box...
When the next iteration of the LCX/LCM firmware rolls out with the ability to send DMX channels from one box to another via ethernet, is there any possibility of "reusing" the original LC box(es) as some form of "dumb terminal" to catch the ethernet somehow, and convert to DMX output?

The LC has no Ethernet, and no low cost way to add it. If you need a 512 channel DMX controller with Ethernet only, we soon offer something like the low cost LCM ;-)

The LC still has a good future as standalone DMX controller with a serial port (which can be used for MIDI with the optional MIDI adapter).
