Sure, go to the fixture setup -> patch panel, and set the fixture to the DMX channels you want to use (comma separated).

You can also work the other way around, and set all DMX channels you want to e.g. light channel 1 in the Patch editor by Command (Ctrl) selecting the wanted DMX channels.
